Banana Nut Cake (3 egg)

Grease and Flour
2 — 9 inch pans or 1 — 13 x 9 inch oblong pan
Sift together:
2½ cups sifted flour
1⅔ cups sugar
1¼ Tsp Baking Powder
1¼ Tsp Baking Soda
1 Tsp Salt
Add
⅔ Cup Shortening
⅓ Cup Buttermilk
1¼ Cup Mashed Bananas
Beat 2 minutes
Add:
3 eggs and another 1/3 cup buttermilk
Fold in:
⅓ ups finely chopped nuts
Pour into prepared pans.
Bake until cake tests done.
Cool.
Finish with icing or Frost with whipped cream. Decorate with banana slices
Temperature: 350º Moderate Oven
Bake Layers about 35 minutes
Oblong 45-50 minutes

1¼ cups sugar
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Salt

⅓ Cup Soft Shortening
½ Cup Buttermilk or sour milk
1 Cup Mashed Bananas
1 egg
Beat 2 minutes
Optional—
2/3 cup chopped walnuts
Pour into prepared pans.
Bake until cake tests done.
Cool.
Finish with icing or Frost with whipped cream. Decorate with banana slices

Creamy Nut Frosting
Read the Recipe
Into 2½ tablespoons flour, blend ½ cup milk.
Cook to a very thick paste, stirring constantly.
Cool to lukewarm.
Meanwhile:
Cream ½ cup shortening (half butter) with
½ cup granulated sugar
¼ tsp salt
Add lukewarm paste.
Beat with rotary beater until fluffy.
Add:
2 cups powdered sugar
½ tsp vanilla
1 cup coarsely chopped nuts. and Blend well.
I use mixer, it comes out nice and fluffy.
